The cookie spice consists of cinnamon, nutmeg, allspice, cloves, ginger, coriander, and caraway. This is close to pumpkin spice in the United States. In the Netherlands we use this for a lot of typical Dutch bakery, like 'Pepernoten' and 'Kruidkoek'.
