Maybe it's because I'm Filipino and our culture has always been a bastard amalgam of American, Spanish, and various Asian influences, but I never cared much for the idea, "How DARE you make X dish like Y? That's not how it's done!" I mean, it can't be the only factor - I've seen plenty of Filipinos express the same - but as far as I'm concerned, all that matters is that the end result tastes good.
